Role Purpose

The ingredient control worker must possess the ability to prioritize daily work assignments. This position gathers recipe ingredients and scales ingredients per standardized recipe for bulk production facility. This includes weighing, measuring, opening boxes or cans and organizing multiple recipes to be issued to the hot and cold production staff. The worker should possess the ability to work with little supervision, work quickly and efficiently, read and follow directions, and use a scale and measuring tools with regards to ingredient amounts and order of cooking procedure. Familiarity with fast paced environment and planning / priority setting skills is preferred.


  • Reads and follows production sheets and recipes with regards to amounts and sequence used in production. Ensures proper recipe adherence.
  • Maintains knowledge of Yields and Variances, methods of calculations, gathers list of ingredients, weighs or portions to specified amounts and organizes in sequence of use per recipe.
  • Follows HACCP (Hazard Analysis Critical Control Point) procedures especially Time and Temperature abuse, food code requirements and FSMA (Food Safety Modernization Act) guidelines as defined by the Manager. Generates required production and quality control records/reports and other required paperwork as required by the Company, USDA, FDA, CMS, etc.
  • Performs a range of material handling skills maintaining a clean, sanitary and organized work area following guidelines defined by the Manager.
